Easy Vegetable Stir Fry Noodles

Making vegetable stir fry noodles is so easy! They’re ready in under 30 minutes for the perfect weeknight dinner. They’re made with a homemade stir fry sauce, are vegetarian and vegan, and are completely customizable.

INGREDIENTS

- Stir Fry Sauce (recipe             included!) - Yellow Onion - Snap Peas - Carrot - Broccoli - Bell Pepper - Garlic - Ginger - Cashews - Rice Noodles

Whisk together the stir fry sauce and set aside.

Par-boil the noodles just under al dente.

In a large wok, saute vegetables for several minutes.

Add in sauce and bring to a simmer.

Add par-boiled noodles and toss to coat.

Continue cooking for a few minutes until sauce is thick and noodles are al dente.

Garnish with cashews, cilantro, and green onions. Enjoy!
