Mixed Vegetable Breakfast Casserole (with tots!)

Whether it's a weekend brunch or make-ahead weekday breakfast, this Vegetarian Breakfast Casserole is loaded with mixed vegetables, topped with crispy tater tots, and elevated by the essence of fennel seeds for a sausage-like flavor without any meat!

INGREDIENTS

- Butter - Onion - Garlic - Mushrooms - Bell Pepper - Spices - Parsley - Cheese - Eggs - Half and Half - Tater Tots - Kale

Saute mushrooms in a large skillet (dry) until their water evaporates.

Melt butter, then add onion, bell pepper, and spices.

Wilt in kale, then stir in parsley. Spread the veggies in a prepared baking dish.

Whisk together eggs, half and half, cheese, and salt and pepper. Pour over veggies.

Gently stir as needed to combine the veggies and egg.

Top with tater tots (and more cheese if you'd like) then bake for around 45 minutes.

Let rest about 10 minutes, then slice and enjoy!
