Vegetarian Potato Soup (GF/DF/V)

This easy, homemade vegetarian potato soup is hearty and comforting. It’s perfect for when you need a quick lunch or dinner, ready in less than 30 minutes. It’s gluten-free and dairy-free (vegan).

INGREDIENTS

- Olive Oil - Yellow Onion - Carrot - Celery - Dried thyme, parsley,        and bay leaf -Salt & Red Pepper          Flakes -Yukon Gold Potatoes -Vegetable Stock -Coconut Milk (can)

Wow wow wow! This soup is amazing! I added a little bit of fresh rosemary and kept it vegan (I’m not vegan!) and it was incredible! This soup will be a staple in my soup routine! -Molly

Saute onion, carrot, and celery in olive oil.

Add garlic and dried herbs, with another pinch of salt.

Add diced potatoes, vegetable stock, and canned coconut milk.

Bring to a simmer until vegetables are tender. Then remove the bay leaf.

Remove from heat, and immersion blend to desired consistency.
