Blackberry Burrata Mint Crostini is the ultimate summer appetizer - requiring little prep work, full of fresh flavors, and pairs well with your favorite wine!
Pre-heat oven to 375°F. Lay out baguette slices on a baking sheet. Drizzle with olive oil (don’t drench them, dry areas are ok). Sprinkle with salt and pepper. Flip slices over and repeat. Toast in oven for 10-12 minutes, flipping halfway through. Watch carefully so they don’t burn.
In a small bowl, mix together mint, lemon, olive oil, and a pinch of salt as needed.
Layer the following on top of each crostini: 1-2 Tablespoons burrata, freshly ground black pepper, pinch of salt flakes 3-4 blackberries, drizzle of mint mixture, and a drizzle of honey. Top with additional mint leaves or salt flakes as desired.
Notes
Crostini can be made a few hours or a day ahead - just store in an airtight container until ready to serve. You may need to reheat in the oven to crisp up if making the day before.
