20-Minute Cabbage Stir Fry

Mix up dinner with this easy Cabbage Stir Fry. Mellow and slightly sweet green cabbage is sauteed with lots of garlic and ginger, and umami-packed mushrooms, tossed in a homemade stir fry sauce. It’s a nutrition-loaded vegetarian meal ready in under 20 minutes!

INGREDIENTS

- Stir Fry Sauce (recipe             included!) - Mushrooms - Onion - Red Bell Pepper - Carrots - Cabbage - Garlic - Ginger

Whisk together the stir fry sauce and set aside.

Heat a wok or large skillet with the sliced mushrooms and allow the water to simmer out of them.

Once brown, add the sliced onions, garlic, and ginger, with a little bit of neutral oil.

Add sliced red bell peppers and cook for 1-2 minutes. For thicker carrots, add them now.

Pour in the stir fry sauce and simmer for 1-2 minutes to thicken slightly.

Toss sliced cabbage until coated and simmer until tender and sauce has thickened.

Serve with rice, if desired, and enjoy!
