Cheesy Potato Croquettes

Delicately crisp, cheesy potato croquettes filled with a luxurious mixture of creamy garlic and herb cheese mashed potatoes. Pan-fried until golden brown, these bites are excellent for breakfast, dinner, or even an appetizer!

Simple Ingredients

- Yukon Gold Potatoes -Boursin Garlic & Herb Cheese - Panko  - Flour - Onion Powder - White Pepper - Eggs

Cook diced potatoes, then mash with Boursin and spices. Taste test for salt levels.

Then, stir in one whisked egg to the filling.

Form the mashed potatoes into small rectangles and chill.

Dredge in flour, then whisked egg, and finally in panko.

Pan fry on each side until golden brown.

Place on a cooling rack or paper towel and continue frying in batches.

Excellent with sauteed kale and creamed corn.
