GREEN BEAN WILD RICE CASSEROLE

Green Bean Wild Rice Casserole is a deliciously cozy vegetarian dinner or side dish on cold winter nights. Made with a wild rice blend, fresh green beans, and homemade cream of mushroom soup. It’s savory, comforting, and hearty.

INGREDIENTS

- olive oil - yellow onion - celery - garlic - fresh thyme - white pepper + salt - fresh green beans - wild rice blend - vegetable broth - condensed cream   of mushroom soup

PREPARATION

Preheat the oven to 375°F.

Gather a 9x13 baking dish - or see notes about using an 8x8 or 9x9 pan.

An Important Note:  Wild Rice Blend

As this recipe is written, it calls for a wild rice blend (linked).  To use 100% wild rice, boil it to al dente, then continue with the casserole directions.

Sautee the onions and celery, then add the garlic and spices.

Add the green beans and uncooked wild rice blend.

Remove from heat and stir in the vegetable broth.

Stir in the condensed cream of mushroom soup (homemade recipe linked!).

Transfer to a baking dish (9x13 will cook faster, and 8x8 or 9x9 will take longer).

Let sit for approximately 10 minutes before serving to set up.

Top with crispy onion pieces and enjoy!
