GREEN BEAN WILD RICE CASSEROLE

A savory blend of fresh green beans, wild rice, and cream of mushroom soup baked into a comforting casserole! Easy to make and perfect for cold nights or a holiday side!

INGREDIENTS

- olive oil - yellow onion - celery - garlic - fresh thyme - white pepper + salt - fresh green beans - wild rice blend - vegetable broth - condensed cream   of mushroom soup

PREPARATION

Preheat the oven to 375°F.

Gather a 9x13 baking dish - or see notes about using an 8x8 or 9x9 pan.

An Important Note:  Wild Rice Blend

As this recipe is written, it calls for a wild rice blend (linked).  To use 100% wild rice, boil it to al dente, then continue with the casserole directions.

1

Sautee the onions and celery, then add the garlic and spices.

2

Add the green beans and wild rice.

3

Remove from heat and stir in the vegetable broth.

4

Stir in the condensed cream of mushroom soup (homemade recipe linked!).

5

Transfer to a baking dish (9x13 will cook faster, and 8x8 will take longer).

6

Let sit for approximately 10 minutes before serving to set up.

7

Top with crispy onion pieces and enjoy!

8

It's hearty enough to enjoy on its own with a side, or along another main dish.
