Green Shakshuka with Kale, Leeks, Artichokes & Feta

Whether it’s for brunch or breakfast for dinner, this green shakshuka recipe with fresh kale, artichoke hearts, leeks, feta, and baked eggs is such a wholesome, easy meal. INGREDIENTS

- Butter - Leeks - Yellow Onion - Serrano Pepper - Garlic - Spices - Kale - Artichoke Hearts - Cilantro - Eggs - Feta

Cut and clean the leeks well before starting.

Saute leeks, onion, pepper, and garlic. Add in spices and salt.

Add artichoke hearts, cilantro, and kale to wilt.

Spread filling evenly and use a small bowl or measuring cup to create wells for the eggs.

Add eggs into the wells to prep for cooking!

Cover and cook until egg whites are set.

Top with feta cheese crumbles and additional cilantro.
