Strawberry Mint Popsicles – sweet, tangy, and made with 4 ingredients – they’re refreshing, healthy, and easy to make!
Let’s cut straight to the chase – I know it’s the last day of summer and I’m posting a popsicle recipe. Sometimes I have a hard time letting a good thing go – which primarily includes all things summer. I will eat sweet corn and strawberries as long as feasibly possible.
I know strawberry season is technically almost – or completely – over depending on where you live (here in Minnesota it doesn’t last long…) these popsicles are so fresh and refreshing, you will definitely want to run to the store and get your hands on any strawberries possible!
This August has been so busy and Strawberry Mint Popsicles have been a LIFE SAVER. Between teacher workshops, cutting lamination, and writing 25 names on approximately a million labels, these popsicles have kept me cool and let me indulge in a summer treat without the calories of say, my other favorite summer treats.
These are now right at the top because no one can argue with FOUR ingredients:
- Strawberries
- Mint
- Lemon Zest
- Lemon Juice (ok, counting the lemon as one ingredient here…)
- Honey
All you need is to blend the ingredients and pour into any sort of popsicle container. Have you seen the hack of using paper cups? Totally do it if you don’t have a popsicle mold.
Even though summer is coming to an end, I hope you can savor a few Strawberry Mint Pops before winter is here!
Strawberry Mint Popsicles
Ingredients
- 3 cups strawberries
- 6-8 fresh mint leaves
- 1 lemon, zested
- 1/4 cup lemon juice, I use the lemon zested
- 1/4 cup honey
Instructions
- Add all ingredients to a blender. Blend until smooth.
- Pour mixture into popsicle mold (add popsicle sticks as needed). Freeze for 4-6 hours.

Mmmm strawberry and mint is one of the BEST fruity combos ever! I’m totally with you on not letting summer (and all it’s amazing produce) go. I may just have to make these while I cut out all my lamination this weekend 🙂
