We’re getting back to the summer basics today with a simple Pico De Gallo recipe. AKA very chunky salsa.
Whichever way you spin in, fresh summer produce and tortilla chips is an absolute winning combination.
I spent the past weekend at Road America in Wisconsin. Have you heard of this before? It’s basically a big race car track. My uncle builds race cars with my Grandpa, and then they go race them each year. This time around, my Mom, brother, and I went to surprise Grandpa and check out what it’s all about. My Grandpa took me around the track – and we got up to 135 mph at one point. Can you say I have the coolest Grandpa ever?! Shockingly, I wasn’t even afraid!
But I did work up an appetite. What’s more satisfying than lawn chairs, family, sunshine, race cars, and some chips and salsa? Not much if you ask me. Quintessential ‘Merica right there.

This Pico De Gallo / Super-Easy-Salsa has minimal ingredients and ALL the flavor:
- tomatoes
- red onion
- garlic
- jalapeno
- lime juice
- cilantro
SIX INGREDIENTS! Well, and salt, but who doesn’t have salt in their pantry? I’ve been making this recipe for years because of how easy it is, and I’m obsessed with anything fresh in the summertime. Ya feel me?! I mean, hi Farmer’s Market Salad and Sweet Corn Salsa, and Strawberry Pie.
It isn’t just for chips anymore, either. Toss this Pico Salsa on top of a salad, pair it with grilled fish or chicken, throw it in a quesadilla or on top of some guacamole for an added flavor punch. Ingredients
- 2 1/2 cups fresh tomatoes, diced (~4 small tomatoes)
- 1/2 cup red onion, diced
- 1/3 cup tightly packed cilantro, roughly chopped
- 3 garlic cloves, finely chopped
- 1 inch piece jalapeño, seeds removed and diced
- 1 lime, juiced
- 1/2 teaspoon kosher salt, more to taste

- Combine all ingredients together, adjusting salt to taste.
