Happy Memorial Day! This weekend signals the start of summer: yard games, cookouts, boats on the lake, and sunshine filled afternoons.
Before we get to this summer inspired recipe, let’s keep the reason for Memorial Day in mind and remember the men and women who gave everything to keep us safe.
Anyone else spend one of these lazy long-weekend mornings at the Farmer’s Market? I absolutely love the crisp summer mornings, the sunshine just starting to warm the air, a hot coffee in hand (and if I’m really treating myself, a fresh pastry!), and the beginnings of the hustle and bustle of the Farmer’s Market. Hashtag blessed.
I also absolutely love eyeing all the fresh veggies, fruits, and homemade goodies while I dream up what is going to be on my weekend menu. For starters: anything with corn and strawberries.
If you haven’t noticed over the past few years, I am OBSESSED with corn and strawberries. I mean, hello fresh corn salsa and charred corn pizza. And get at me, summer strawberry pie or cheesecake, or sangria!
You get the idea. So what better than to combine the two for this summery Farmer’s Market Strawberry and Corn Salad?! It’s downright perfection.
I said it and I mean it: perfection. Simple, delicious, perfection.
All the ingredients either come straight from the Farmer’s Market or your pantry…
…spinach
…strawberries
…corn
…fresh farmer’s cheese (more on this in a minute!)
…sunflower seeds
And the dressing? An incredibly easy blend of lemon juice, apple cider vinegar, shallot, honey, and dijon. Bonus points if you use local, farmer’s market honey, too!
The slight tartness of the dressing pairs so perfectly with the sweetness of the strawberries and corn. And the creaminess of the cheese. So the cheese! You have a couple options here: use a local, semi-hard, creamy farmer’s cheese. I mean it: go sample the cheeses at the Farmer’s Market and pick the one you like best – mild in flavor with a little bit of somethin’-somethin’. OR use my favorite standby that fits that bill: Kerrygold’s Dubliner Cheese (not sponsored, just a big fan). You should be able to find it in your regular grocery store without a problem.
There you have it! A simple, deliciously easy summer salad. I’ve got to get back to hitting the pool (only breaking for a lunch consisting of Farmer’s Market Strawberry Corn Salad and Strawberry Mint Popsicles). Get the Recipe Farmer’s Market Strawberry Corn Salad
Ingredients
- 1 Tablespoon shallot, minced
- 2 Tablespoons fresh lemon juice
- 2 Tablespoons apple cider vinegar
- 1-2 teaspoons honey
- 1 teaspoon dijon mustard
- Salt and pepper to taste
- 4-5 cups baby spinach
- 12-14 strawberries, quartered
- 2-3 ears of corn, kerneled
- 1/3 cup sunflower seeds
- ~4 ounces Dubliner or semi-hard cow’s cheese, cubed
Instructions
- Dressing: whisk together shallot, lemon juice, apple cider vinegar, honey, dijon, and salt and pepper to taste. I start with 1 teaspoon honey and add more to taste – depending on how tangy you want the dressing.
- Toss together spinach, strawberries, corn kernels, sunflower seeds, and cheese. Toss with dressing immediately before serving.
