I’ve got a super fresh, super summery, and super flavorful salad for you today.
But first – how has your summer been?!
I’m on the final leg of my adventures; spending the last few days bouncing around Melbourne before I head back home and to reality. It’s been quite a whirlwind summer, to say the least!
Unfortunately, this is the last recipe I have prepped for you until I’m back – there will be some travel posts – but for the next week, this salad will be all you need anyway.
So let’s get to it…
I am loving fresh summer salads – especially after eating all the deep fried spring rolls in Vietnam… and Cambodia… and Thailand. Ok, there were a lot of spring rolls in my life this summer.
I know you’re not judging, right!? It was amazing, but with summer vacation coming to an end, my body is craving the freshness of summer big time.
With one exception. I don’t love just any salad. If I’m going to be eating a salad, it has to be interesting, flavorful, and full of texture to be enjoyable. Who’s with me?!
No boring salads here – ever. So Nectarine Burrata Basil Salad is definitely my go-to summer salad. It has uber juicy summer nectarines, fresh peppery basil, and creamy, creamy burrata. Oh, and pine nuts for an extra crunch.
So much to Love about this Nectarine Salad
This salad is honestly like a healthy cheese board (which is always all right with me).
A little cheese, sweet fruit, and fresh basil for the winning combination.
We are missing some chewy baguette to go along with it… so please friends, go ahead and add it to the side.
BUT THE BURRATA!
Cheeseboard heaven. If you haven’t had burrata yet (go. now. you’re welcome.), it’s a ball of mozzarella with heavy cream soaked mozzarella pieces inside. When you cut it open, you’ll discover sweet, milky, creamy, luscious cheese. Like I said, heaven.
Are you wondering about the whole nectarine thing?
I feel like we never see nectarines in recipes… it’s always peaches. Which is totally cool – I love them all equally – but I felt like our nectarine friends needed a little love.
And they were easier to eat in the salad. I prefer the smooth skin of nectarines in the salad over the fuzzy peach. To each his own though, so if you are a peach fan through and through, your salad is still going to be kickin’. ??
We cannot forget the dressing !!! I’ve gone on and on about homemade dressing before – here and here – so I won’t *really* lecture you about the benefits of homemade dressing. You’re already making it by the batches, yes? Ok, good.
The Homemade Dressing
The dressing for Nectarine Burrata Basil Salad is light and full of spice – adding to the whole “cheese board” feel that’s going on with this salad.
It only FIVE ingredients (ok, it’s really 8, but do we need to count salt and pepper as ingredients?!) which is a complete bonus!…
…lemon juice
…white balsamic vinegar
…black pepper & salt
…red pepper flakes
…honey
…olive oil
There you have it. A little tang, a little sweet, and a little kick. The perfect balance for a cheese-board inspired summer salad.
Nectarine Burrata Basil Salad
Ingredients
- Dressing
- 1 Tablespoon lemon juice, ~1 lemon
- 2 Tablespoons white balsamic vinegar
- 1/4 teaspoon black pepper
- 1/4 teaspoon red pepper flakes
- 1/4 teaspoon sea salt, halve if using table salt
- 1 Tablespoon honey
- 3 Tablespoons olive oil
- Salad
- 1 head green leaf lettuce, chopped
- 1/4 cup basil leaves, thinly sliced
- 1/3 cup pine nuts
- 3 nectarines, sliced or diced
- 8 ounces burrata
Instructions
- Whisk together lemon juice, white balsamic vinegar, black pepper, red pepper flakes, salt, and honey. Slowly drizzle in olive oil while whisking, until combined.
- Toss together lettuce, basil, pine nuts, nectarines, and dressing. Top with burrata ball and cut into it as you serve the salad – remember it will be creamy!
